Interestingly enough, there’s a belief that restauranteurs take advantage of this consumer mindset, by placing a larger mark-up on the second cheapest wine on the menu. However, a recent empirical study conducted by the London School of Economics (LSE) and the University of Sussex business school concluded that this is not the case in reality (see article here).
